Green Goodness Cheesy Spaghetti

Noodles

1 carrot, spiralized

1/2 medium zucchini, spiralized

1 large green onion, diced (reserve white of onion for sauce)

Sauce

1/2 zucchini, cubed

1 avocado

juice of one lemon

1/4 cup nutritional yeast flakes

1 tablespoon xylitol or sweetener of choice

pepper and sea salt to taste

 

Directions

1.  Combine all sauce ingredients in a food processor and blend until smooth.

2.  Spiralize the carrot and zucchini, set aside in bowl.

3.  Finely slice the green onion, mix in with noodles.

4.  Pour sauce over noodles and stir until equally coated.

5.  Garnish with topping of choice, best served fresh!

Over the past three years of enjoying the raw food lifestyle, whenever making  noodles I always used a peeler.  And you know what, it worked great!  Spending $40+ to be able to spiralize seemed like a waste of money. Well, my tune  has changed.  For Mother’s Day my family bought me a spiralizer.  It saves so  much time and you can whip out noodles in a matter of moments!  The texture is  that of regular spaghetti noodles, just thinking about it make my taste buds  start to buzz.  I’ve spiralized carrots, zucchinis, apples, king oyster mushrooms, and  the top of a bell pepper.  I have to say this is now one of my most beloved  kitchen items!  (Google it; Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable,  you deserve it!)  We found a great deal on Amazon for $28 with free shipping.
