Green Goodness Cheesy Spaghetti

1 carrot, spiralized
1/2 medium zucchini, spiralized
1 large green onion, diced (reserve white of onion for sauce)
1/2 zucchini, cubed
juice of one lemon
1/4 cup nutritional yeast flakes
1 tablespoon xylitol or sweetener of choice
pepper and sea salt to taste
1. Combine all sauce ingredients in a food processor and blend until smooth.
2. Spiralize the carrot and zucchini, set aside in bowl.
3. Finely slice the green onion, mix in with noodles.
4. Pour sauce over noodles and stir until equally coated.
5. Garnish with topping of choice, best served fresh!

Over the past three years of enjoying the raw food lifestyle, whenever making noodles I always used a peeler. And you know what, it worked great!
